100g glacé cherries,
225g softened butter,
225g light muscovado sugar,
4 large eggs, 225g SR flour,
1 level tsp mixed spice,
1 tbsp brandy
Grease and line a 20cm round cake tin.
Cut cherries in to quarters and rinse and dry well.
Measure all ingredients into a large bowl and beat together until thoroughly combined and place in prepared tin.
Bake in pre-heated oven 150C/Fan 130C/Gas 2 for 2-21/4 hours.
1¾ oz (50g) unsalted butter, cubed, plus extra for greasing
8oz (225g) plain wholemeal flour, plus extra for dusting
8oz (225g) plain white flour or spelt flour
3 fl oz (75ml) whole milk
9¼ fl oz (285ml) buttermilk
2 tsp bicarbonate of soda
Pinch of salt Preheat the oven to 220C/425F/Gas mark 7.
Grease a baking sheet.
Sift the flours and bicarbonate of soda into a bowl, tipping in the grain left in the sieve.
Add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
Add the buttermilk and milk and mix to a soft dough, adding a dash more milk if the dough is dry.
Turn the dough out onto a lightly floured surface and shape into a ball.
Place it on the prepared baking sheet, flatten slightly and sprinkle with extra flour.
Using a floured knife, make a deep cut across the top of the dough.
Make a second cut in the opposite direction.
Bake the bread in the oven for 35 minutes or until risen and it sounds hollow when the base is tapped.
Transfer to a wire rack to cool.
